Ingredients:
- 1 whole chicken (1.5–2 kg / 3–4 lb)
- 50 g (4 tbsp) butter, softened
- Fresh rosemary and thyme
- 6 garlic cloves
- 1 lemon, halved
- 600 g (1.3 lb) baby potatoes, halved
- Salt and pepper
Instructions:
- Preheat oven to 200°C / 400°F.
- Rub chicken with butter, herbs, salt, pepper, and lemon juice.
- Place potatoes and garlic in roasting pan, put chicken on top.
- Roast for 60–70 minutes, basting occasionally.
- Rest 10 minutes before carving.
