Christmas Herb-Roasted Chicken with Garlic Potatoes

Servings: 4–6 Prep Time: 15 min Cook Time: 60–70 min

Ingredients:

  • 1 whole chicken (1.5–2 kg / 3–4 lb)
  • 50 g (4 tbsp) butter, softened
  • Fresh rosemary and thyme
  • 6 garlic cloves
  • 1 lemon, halved
  • 600 g (1.3 lb) baby potatoes, halved
  • Salt and pepper

Instructions:

  1. Preheat oven to 200°C / 400°F.
  2. Rub chicken with butter, herbs, salt, pepper, and lemon juice.
  3. Place potatoes and garlic in roasting pan, put chicken on top.
  4. Roast for 60–70 minutes, basting occasionally.
  5. Rest 10 minutes before carving.
