Ingredients:
- 250 g (2 cups) grated carrots
- 200 g (1 cup) sugar
- 150 ml (2/3 cup) vegetable oil
- 3 eggs
- 200 g (1 2/3 cup) flour
- 1 tsp baking soda
- 1 tsp cinnamon
- Pinch of salt
Frosting:
- 200 g (8 oz) cream cheese
- 100 g (1/2 cup) butter, softened
- 200 g (1 1/2 cups) powdered sugar
- 1 tsp vanilla extract
Instructions:
- Preheat oven to 180°C / 350°F. Grease baking tin.
- Mix sugar, oil, and eggs. Add carrots.
- Stir in flour, soda, cinnamon, and salt.
- Bake 40–45 min. Cool completely.
- For frosting: beat cream cheese, butter, sugar, vanilla.
- Spread frosting over cake.
