Ingredients:
- 2 chicken breasts (seasoned with salt, pepper, oregano, lemon juice)
- 2 cups cooked rice or quinoa
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup black olives
- 2 tbsp olive oil
Yogurt Sauce:
- 1 cup Greek yogurt
- 1 tbsp lemon juice
- 1 garlic clove, minced
- Salt and pepper
Instructions:
- Cook seasoned chicken in a skillet until golden, slice into strips.
- Divide rice/quinoa into 4 meal-prep containers.
- Add chicken, cucumber, tomatoes, onion, feta, and olives.
- Mix yogurt sauce and pack separately. Drizzle before serving.
