Meal-Prep Greek Chicken Bowls

Ingredients:

  • 2 chicken breasts (seasoned with salt, pepper, oregano, lemon juice)
  • 2 cups cooked rice or quinoa
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup black olives
  • 2 tbsp olive oil

Yogurt Sauce:

  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • Salt and pepper

Instructions:

  1. Cook seasoned chicken in a skillet until golden, slice into strips.
  2. Divide rice/quinoa into 4 meal-prep containers.
  3. Add chicken, cucumber, tomatoes, onion, feta, and olives.
  4. Mix yogurt sauce and pack separately. Drizzle before serving.
